I just wanna make Corn Chowder…

Last night I was over at the neighbor’s house and we decided that we should try and get together once a week for dinner. Her husband works late and so it is often her and the kids much like in my house. Well, it was a beautiful fall day and I decided that I wanted to make GG’s corn chowder. Irish Boy is not a fan of it so I figured we “girls” and the kids could eat it!

Reminder before I get any further — Nutty Mother + Cooking = Disaster

I emailed GG to ask her if she knew the recipe off the top of her head – she is in Florida. She said no and that Mucky was home – in Vermont - and to ask him. I send him an email and get this…

bacon
saute onion in bacon fat
water
potatoes till done w/ bayleay
corn
milk & butter (?)


That is directly off the card-that’s all there is there ain’t no more

You’re kidding right? Where are the amounts? The cooking times? THE INSTRUCTIONS???

I email GG with this…

How the hell is this a recipe…

bacon
saute onion in bacon fat
water
potatoes till done w/ bay leaf
corn
milk & butter (?)

I get this back…

ok - what part of it don’t you get. you fry up the bacon until crispy. retain some of the fat to fry the onions in. add cubed up potatoes and water to cover. throw in bay leaf. cook until potatoes done but not mushy. add corn for last 5 minutes and then milk. do not boil after milk has been added. it’s pretty straightforward to me.

And I reply…

But HOW much? Man you know I can’t cook! You are just not nice!

And get back…

a pound of bacon. a few pounds of potatoes - not sure just went by how it looked. usually as much corn as potatoes - again see how it looks. also, if it’s not thick enough add some cornstarch but you mix that with cold water and gradually add it. i guess i never really think about measurements. in english “one takes”

yeah yeah yeah! ma nimpt or however the hell you spell that!

maybe i really can cook!!!!!

Yes, we know you can cook! That is how we had 6 home cooked meals a week when I was younger. But somehow that gene missed me. Bake? Yes. Cook? Hell no!

Root Beer Floats!

Sunday night I was looking for something that I could eat but wouldn’t throw me off SB. So off to Wal-Mart I go!

No Sugar Added Ice Cream and Diet Root Beer = Root Beer Floats = YUMMMMYYY!

Monday night after a kick butt dinner, we all gathered round the table again and had some kick butt Root Beer Floats!

Cream Cheese Muffins…

Oh yum! So of course, as previously discussed, I can not live without my sweets and desserts so I have been on the hunt for South Beach friendly recipes and I found another one!

As the Southerners say - Bless My Heart :)

I found this one on a Bulletin Board but oh it is good!

Cream Cheese Muffins - The Low Carb Kind

2 8oz. pks. philadelphia cream cheese
1/2 cup sweetener (I use spenda)
2 eggs
1/2 tsp. vanilla

Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake at 350 for 20 min.

Here is the finished product…

Yes, they cracked and yes they fell but really - who cares?? They still taste great!
