No Carb Again!
So Irish Boy and I have both been feeling crappy lately so we decided to go all the way back to Phase 1 of South Beach! We both know we feel so much better when we adhere to the South Beach lifestyle.
But of course it is very difficult for me. I am a pastry/chocolate/sweets WHORE! No really! If you locked me in at Panera Bread for the rest of my life, I would die a happy (fat but happy) woman!
This of course sent me a googling! I found this easy and cheap recipe at Kraft.com.
Man it was so good that I licked the plate - no kidding!

INGREDIENTS
1 container (32 oz.) plain nonfat yogurt
2 pkg. (4-serving size each) JELL-O Brand Lemon Flavor Sugar Free Low Calorie Gelatin
1 tsp. finely grated lemon peel
1/2 tsp. ground ginger ( I did not add the ginger)
DIRECTIONS
Mix yogurt and dry gelatin in medium microwaveable bowl. Microwave on HIGH 2-1/2 min. or until gelatin is completely dissolved, stirring after 1-1/2 min. Stir in lemon peel and ginger.
Pour into 9-inch pie plate sprayed with cooking spray.
Refrigerate 3 hours or until set. Store leftover pie in refrigerator.
Now my plan is to try other flavors next time - maybe Key Lime or Strawberry! Yummmmmyyy!

I love this. I am currently a South Beacher! Really, its the only diet- food plan that works for me.
I’m gonna try this recipe right away. And I am a Key Lime junkie so I’m stealing your suggestion, and using key lime yogurt.
